Ingredients Carrot Cake Cookie:

• 2½ cups of all-purpose flour
• 1 cup rolled old-fashioned oats
• 1/2 tsp. baking soda
• 1/2 tsp. baking powder

• 12 teaspoons of ginger, ground
• freshly grated nutmeg, 1/2 teaspoon
• Salt, 1/2 teaspoon
• 1-half cup Buddha-Buddha
• granulated sugar, half a cup
• 2 tablespoons and ½ cup plus 2 of tightly packed light brown sugar
• One big egg
• Pure vanilla extract, two tablespoons
• 1/4 cup shredded, peeled carrots (about 212 carrots) and 1/4 cup dried cherries
• Freshly grated carrots

How It’s Prepared

Preheat your oven to 375°F (190°C). Prepare two baking trays by lining them with parchment paper or lightly coating them with shortening. Combine the flour, oats, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt in a large mixing bowl.
In a separate bowl, whip together the Buddha Budda (cannabis-infused butter), granulated sugar, and brown sugar on medium speed until smooth and fluffy. Mix in the egg and vanilla extract until fully incorporated.
Reduce the mixer speed to low and slowly add the dry ingredients. Fold in the shredded carrots and dried cherries until the dough is evenly mixed.

Weigh the finished dough and divide it into 24 equal portions by measuring each individually. Shape into balls and arrange on the baking trays, keeping 2 inches of space between each cookie. Gently flatten each piece to about ¼-inch thickness.
Bake for 9–11 minutes, or until the tops begin turning lightly golden. Remove from the oven and transfer to a wire rack to cool completely before filling or serving.
